Making due

I enjoy cooking and like having dinner ready when Chris gets home from work. I am trying to cook healthier meals and use what we already have at home, instead of making multiple trips to the market.

The other night I made herb crusted chicken, green beans and fruit salad. I was worried that the herbs might be a little strong on the chicken and I thought that adding some mozzarella cheese on top would be good (and Chris loves cheese).

I opened the cheese but it was moldy...oops! I saw that we had string cheese and decided to be resourceful. I chopped up two string cheese logs? rolls? packages? I don't know what to call them, but I'm pretty sure you get what I mean.

They didn't melt completely, but it did the trick and I was pretty happy with my adaptation!
