We love lemon chicken and my Mother-in-law makes a great recipe, but it is really unhealthy. Since we are trying to eat better, I searched (and found) a recipe that I thought I would try. It was delicious so here is the recipe for Lemon-Apricot Chicken. (found from eatbetteramerica.com)
All you need is a few ingredients:
For the chicken:
1 egg white
1 TBSP water
1/2 c. Bisquick heart smart mix
(I just used the normal kind because that is what we had)
1 1/2 teaspoons grated lemon peel
(I didn't measure it, I just used one small lemon, but a little more would have been good)
1/8 tsp. garlic powder
3 small chicken breasts (or chicken chests)
cooking spray
lemon slices
(The lemon slices were perfect for adding a little more zing to the chicken)
for the sauce:
1/3 c. apricot preserves
1 TBSP. lemon juice
1/4 tsp. soy sauce
1/8 tsp ground ginger
1.Heat oven to 425 degrees and spray a 9x13" pan with cooking spray.
2. combine egg white and water, beat slightly
(I ended up transferring this to a plate because my bowl was too small)
4. place chicken breasts between wax paper and pound until thin
5. dip chicken into egg mix, then into bisquick mix
6. place into 9x13" pan
7. spray chicken with cooking spray

8. bake uncovered for 20 minutes, then turn chicken over and bake another 10 minute
For the sauce:
9. Stir together all sauce ingredients in microwaveable bowl.
10. microwave on high for 1 minute.
11. stir
12. Cut chicken into strips and place on plate.
13. Pour sauce over chicken and garnish with lemon slices.
Taa Daa!
We added peas and carrots and some garlic/herb noodles to complete the meal.
This is definitely a keeper recipe.
