At work we take turns cooking dinner, that way we are almost always guaranteed a good meal for less than $5! it was my turn recently and I went with one of our home staples: chicken, veggie and rice bowls.
I like them because they are super easy and you can use whatever you have on hand!
This time I cut up chicken into cubes and marinated them all day in teriyaki sauce, some powdered ginger, and sesame seeds. Then I just threw them into a skillet and cooked them for about 20 minutes.
I also cooked broccoli, lima bean and summer squash in a different pan. I only cooked these for about five to ten minutes so that they would just be tender. I just added a little of the teriyaki sauce for flavor.
In the last skillet I cooked carrots, red and green bell pepper, and onions. I kept all of these in a separate pan for two reasons:
1. I'm not a fan of bell peppers or onions (but my co-workers are)
2. They needed a little longer to cook than the above veggies
I also cooked some brown rice and topped it with all of the above. If you were cooking for fewer people than I did (I was cooking for 9) you could easily throw all of the veggies into one pan and just stagger them so they come out ready at the same time.
This is our go-to meal at home because you can really use whatever you have on hand: corn, beans, asparagus, snap peas, water chestnuts, bean sprouts, brussel sprouts, etc. Sometimes we use noodles instead of rice and both are good.
