Yumm-o

I've been trying really hard lately to plan well-balanced meals for the week because for awhile, we didn't have many home cooked meals {like, none for about three weeks}.

I grew up cooking with my parents and grandparents and I love it when a meal I've made comes out well. {Just not all the dishes after!}.

Earlier this week I found a new recipe that came out delicious and I wanted to share!

Southwestern skirt {flank} steak.
{I eyeballed most of the measurements for the marinade}

1/3 c. orange juice
2 Tbsp fresh cilantro (I just grabbed a bunch and tore it up)
2 Tbsp. lime juice
1 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. pepper
1 clove garlic (minced) (I didn't have any fresh, so I used powdered garlic)
8 oz. flank steak (I eyeballed it)

Trim fat off steak and score both sides of steak in diamond pattern. Put all ingredients into a bag or Tupperware to marinate for 1-4 hours (I left it in the fridge for about 2 hours and it had really good flavor!)

I cooked it on a grill pan on the stove for about 12-15 minutes {but you could easily BBQ it instead}.

I added steamed broccoli and 1/2 baked potato.



This is definitely a keeper recipe. If you're more creative than I am, a summer/citrus-y salsa would taste really good on top of the steak. This would also taste really good cut up for tacos.

Yumm is right! That looks right off the menu at Logan's steakhouse. Pinterest has helped me discover lots of new recipes lately. And I've discovered I like the crockpot ones best...they are so easy!

mmm - we love us some steak around here... I'll be passing this on to the hubbs {since he does all the grilling!}
