Taco soup

The other night at work was my turn to cook dinner for everyone and I had no clue what to make. Fortunately I have a file full of recipes that I want to try, unfortunately most of the recipes are for desserts!

There was a recipe for taco soup and since the morning started out pretty foggy and cool, it seemed perfect (unfortunately I have no idea where it came from, so if you know, please let me know so I can give credit).
It was SO easy, just pour everything into the crock pot and let it simmer all day {and it was a big hit!}.

Taco Soup:

2 pounds ground turkey
1 chopped onion
2 cans pinto beans
1 can kidney beans
1 can corn (drained)
1 can diced tomatoes
1 can tomatoes with chilies
1 can Mexican stewed tomatoes
2 sm. cans diced green chilies
1 can diced black olives (drained)
1 pkg taco seasoning
1 pkg (dry) ranch salad dressing mix

Brown the turkey and onions in a skillet.
Transfer turkey and onions into crock pot.
Add all above ingredients.
Cook 6-8 hours (I did it on high because we have an old crock pot at work, but low would work if you have a newer one).

I topped it with avocado, sour cream, cheese, and Frito's. There was enough for six of us to have multiple bowls.

That looks delish. I'm going to try it. I love that's it's a crock pot dish. Love using my crock pot. I love chili and cornbread for cool weather meal, and I use a crock pot for that, too. hugs, Mal
